Recipe mode fits a straight sequence with one clear input and output: clean text, convert a format, then present the result. The full canvas is more useful when steps branch, merge, loop, or require several review and error paths.
Choose the view that makes the data path easiest to understand, not the most impressive-looking one. In either mode, define the expected output and test an ordinary input plus one failure case. A linear recipe can still need explicit handling for empty data or a failed external call.
If you cannot explain where a branch rejoins, the canvas is probably the clearer representation.
